Scenes are cut or changed all the time when books are made into movies. I have all the cuts/changes listed here for all scenes involving Snape. I used the paperback version of Chamber of Secrets with the ISBN 0439420105.

hphpVery Big Trouble (pp. 96-102)
hpFilm Version
After Harry and Ron are walloped by the Whomping Willow, they are found by Filch who then brings them to Snape's office. Moments later, McGonagall and Dumbledore show up to dole out the punishment.
hpBook Version
Unlike the film version, Snape is the one who finds Ron and Harry watching the sorting through the window of the Great Hall. The film's version of this scene is almost identical to what is in the book.

hphpWrong Place at the Wrong Time (pp. 179-184)
hpFilm Version
After coming back from his detention with Lockhart, Harry runs into Ron and Hermione who then follow him to the corridor on the second floor where the first message was written. When Dumbledore et al come upon the scene, the trio have to explain why they were in the hall before everyone else. This scene continues much like it did from the book, except that they did not remove themselves to Lockhart's office.
hpBook Version
In the book, the trio are coming from Sir Nicholas' Death Day Party, not detention and dinner. Also, this scene starts in the hall but the group moves to Lockhart's office to examine Mrs. Norris. Snape also gets the chance to chew out Lockhart when said dandy tells them that he will make the mandrake potion.

This scene does not appear in the film.
hpBook Version
Harry throws a firework into Goyle's cauldron so that Hermione can sneak into Snape's office to retrieve a few choice items for the Polyjuice Potion.

hphpDueling Club (pp. 240-247)
hpFilm Version
After Snape knocks out Lockhart, Harry and Malfoy have a go at each other while everyone is watching.
hpBook Version
The film's version is only slightly different from the original. In the book, after Snape and Lockhart square off, each student is paired and then duel each other until Lockhart realizes he should have taught them how to block spells. It is at that point that Harry and Malfoy then duel each other.

hphpValentine's Day (pp. 300-301)
hpFilm Version
This scene does not appear in the film.
hpBook Version
Lockhart has a little bit of Valentine's Day fun at breakfast as Snape glares on.

hphpPotions Class (pp. 339-340)
hpFilm Version
This scene does not appear in the film.
hpBook Version
Draco asks Snape near the end of Potions class if he'll apply for the position of headmaster since Dumbledore has been suspended. Draco makes a crack about "mudbloods" and Ron tries to strangle him, however, fortunately for Ron the bell rung as he started yelling at Draco so Snape did not hear any of it. Snape then takes the class to Herbology, as a professor has to accompany students at all times.

hphpThe Second Message (pp. 372-374)
hpFilm Version
In the film, this scene takes place in the corridor right in front of the second message ("Her body will lie in the chamber forever"). Snape has only one short line.
hpBook Version
McGonagall calls all the staff to the staffroom where Ron and Harry are hiding in a wardrobe (unbeknownst to the professors). Snape and the other professors rip Lockhart a new one before leaving.
