Scenes are cut or changed all the time when books are made into movies. I have all the cuts/changes listed here for all scenes involving Snape. I used the paperback version of Sorcerer's Stone with the ISBN 0439362123X.

hphpThe Sorting (pp. 156-157)
hpFilm Version
While Harry is waiting to be sorted he looks around the Great Hall. Harry's eyes meet Snape's (who is sitting right next to Quirrell) and Harry's scar starts to hurt. After Harry's been sorted and is eating dinner at the Gryffindor table he asks Percy about Snape.
hpBook Version
Harry has already been sorted and is eating dinner when his scar starts to hurt and immediately after that he asks Percy about Snape.

hphpHarry's Dream (pp. 162)
hpFilm Version
This scene was not in the film.
hpBook Version
Harry has a dream about his sorting in which he was wearing Quirrell's turban instead of the sorting hat. Malfoy is laughing at him and then morphs into Snape.

hphpPotions Class (pp. 169-173)
hpFilm Version
In the film's original version much more of Harry's first Potions class was kept in, but everything after "clearly fame isn't everything" was cut in the final version.
hpBook Version
Snape calls roll in this version and has his "our new celebrity" line right after calling out Harry's name. The rest is more or less the same as the movie (the uncut version of the class), but continues after Snape tells Harry he's taking a point off of Gryffindor for his "cheek". In the book, the class goes on to make a potion to cure boils and Neville melts his first cauldron. Snape then takes another point off of Gryffindor after accusing Harry of sabotaging the potion.

hphpHalloween (pp. 215-221)
hpFilm Version
Harry and Ron see the troll heading for the girls bathroom and follow it in there. Right after they've knocked it out, McGonagall, Snape and Quirrell show up. McGonagall does all the talking and Gryffindor ends up with 5 points being added.
hpBook Version
Harry and Ron see Snape in the hall as they're looking for Hermione. They see him heading towards the 3rd floor and are about to follow him when they find the troll. The rest is just like the movie, except that Harry doesn't notice the wound on Snape's leg until later.

hphpIn The Courtyard (pp. 224-225)

hpBook Version
Harry, Hermione and Ron are in the courtyard standing around a fire that Hermione has conjured. Snape sees them and Harry notices his limp as he walks towards them. Harry has a copy of Quidditch Through the Ages with him and upon seeing it Snape claims that students are not allowed to take books out of the library. Snape takes the book from Harry and deducts 5 points from Gryffindor.

Harry decides to go ask Snape if he can have Quidditch Through the Ages back. He knocks on the staffroom, but no one answers. When he pushes open the door he finds Snape with his robes pulled up over his knees and Filch giving him bandages. Snape yells at him to get out and Harry runs back to the common room.

hpFilm Version
While Harry is eating breakfast before his first quidditch game, Snape stops as he's walking past the Gryffindor table to get a few insults in before the game. As he's limping away, the trio figure out that he's limping because Fluffy hurt his leg.

hphpWeasley v. Malfoy (pp. 242)

This scene does not appear in the film.
hpBook Version
Snape breaks up a fight between Weasley and Malfoy.

hphpThe Restricted Section (pp. 255-256)
hpFilm Version
Harry comes upon Snape questioning Quirrell as he's trying to get away from Filch, who's found his burnt out lantern in the Restricted Section. Filch then finds Snape and the two run off to the library.
hpBook Version
Snape questioning Quirrell comes later in the book, but the rest of this scene is essentially the same.

hphpSnape Referees (pp. 275-279)
hpFilm Version
This scene does not appear in the film.
hpBook Version
Snape referees the Gryffindor v. Hufflepuff quidditch match.

hphpWhere Your Loyalties Lie (pp. 279-281)
hpFilm Version
This scene appears earlier in the film when Harry uses his invisibility cloak to get into the Restricted Section.
hpBook Version
Harry follows Snape to the Forbidden Forest where he meets Quirrell for a little "chat."
